Take this easy banana bread recipe and customize it by adding in chocolate chips or make it into muffins everyone will enjoy!
I have to admit that this isn’t always the banana bread recipe that I use but when I was looking through my recipe collection I came across it and I wanted to share because it is so simple! When making muffins/loaves I tend to look for recipes that are oil or sour cream based vs. butter based recipes, but these simple recipes are great because you are more likely to always have the ingredients on hand.
The best thing about baking Banana Bread (and muffins) is possibly one of the easiest things to bake! It offers a little bit more grace for cooking time as the bananas tend to keep it moist and its a little harder to dry out. You can also always add chocolate chips to change it up.
It’s been raining on and off for the last few days and banana bread is the type of classic recipe that screams comfort food to me! This is my grandmother, June’s recipe that I have adapted because I like chocolate chips in my banana bread cure my sweet craving.
When I was younger I wanted to bake more at home so my mom copied down some recipes for me while at my grandmother’s house and after making this a few times I think she forgot to write down the vanilla, so I have added it in!
A few things about this recipe:
- Make sure you read the recipe listed below and not the hand written one in the picture, as stated above, I think it is missing the vanilla !
- If not everyone loves so much chocolate in their banana bread you can skip it OR use the following option: use 3/4 cup chocolate chips, put 1/2 cup IN the loaf and then sprinkle the other 1/4 cup only on 1/2 of the loaf. This way a few slices will have less chocolate!
- If you want to make muffins you can divide batter into a 12 muffin pan and then adjust your cooking time. I suggest starting at 16-17 mins and adding a min as needed not exceeding 20 mins. Muffins can dry out a little easier so keep an eye on them!
Ally’s tips for this easy banana bread:
- Line your pan with parchment paper (see in slideshow below) and this will make it easier to pull out after baking. I usually just spray the ends of the pan with cooking spray to avoid having to get crafty with scissors and parchment paper to line the whole pan.
- Use 2 bull dog clips to keep your parchment paper in place while you pour the batter. Just make sure you remove before placing in the oven!
- After adding in the sugar and butter but before the eggs, add your bananas in so you can freely mix them into the mixture without needing to worry about over mixing!
Storage
Store in an airtight container, best if eaten within 4 days. If you want to freeze it, I suggest freezing it whole.

Easy Banana Bread with only 8 ingredients
Equipment
- Large Mixing Bowl
- Small Mixing Bowl
- Electric Mixer
- Spatula
- loaf pan
- Parchment Paper
- two bulldog clips (optional)
- Whisk
Ingredients
- 1/2 cup salted butter room temperature
- 1 cup granulated
- 2 eggs room temperature
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- dash salt
- 3 bananas mashed
- 1 tsp vanilla
- 1 cup semi sweet chocolate chips optional
Instructions
- In a small mixing bowl add flour, baking soda and nutmeg. Whisk for approx. 20 seconds and set aside.
- In a large mixing bowl, add butter and sugar and mix until well combined.
- Add in mushed bananas and mix until bananas are well combined with butter and sugar mixture.
- Add in vanilla and eggs one at a time, scraping the sides of the bowl as needed.
- Add dry ingredients (and 1/2 cup chocolate chips if you choose) and mix until combined but be careful not to over mix. If adding chocolate chips, set remaining 1/2 cup aside for topping.
- Set batter aside and line a standard loaf pan with parchment paper. Clip bulldog clips over the side to keep the paper from moving when you pour the batter into the pan.
- Pour batter in pan and with spatula, smooth top and make sure batter is evenly distributed in the pan.
- OPTIONAL: Sprinkle with remaining chocolate chips.
- Bake 50-60 mins. Let cool completely before serving.
