this easy FUNfetti sheet cake is perfect for a summer bbq, a last minute celebration or just because! The best part about this is you don’t need any cake decorating skills to make this cake !
Something about FUNfetti reminds me of summer and sunshine and being the first week of June I thought this is perfect for upcoming summer BBQ’s or to serve to friends and family on the weekends!
For this cake I took my grandmother’s recipe for a two egg cake and added some sprinkles to make it a little more FUN. It’s light and fluffy and as long as you keep an eye on it when cooking it won’t be dry either! I typically reach for for recipes with an oil or sour cream base when picking cake recipes but a lot of the more “traditional” cake recipes relied on butter and eggs to make it moist and fluffy. I think it turned out great and I modified her butter icing recipe as well to make an easy vanilla icing recipe that is pretty foolproof!

June also happens to be pride month and how perfect is FUNfetti for pride! Growing up we as a family always participated in our cities pride events celebrating family, friends, love, equality, respect, pride and JOY! If I were to put all these things into a baked item, FUNfetti is probably the way to go.

A few things about this recipe:
- the 1/2 cup of sprinkles is divided, so 1/4 cup goes into the cake and the other 1/4 cup goes on top. The best type of sprinkles are the basic sprinkle rods, so you will only need 1/4 cup if you want to use a different type on top.
- If you are using a 8×8 pan vs. a 9×9 pan you will need to adjust your cooking time by adding 5-10 mins because the cake will be taller than the one in this recipe.
- If you are using unsalted butter you will need to add salt. I haven’t tried this but for this amount of batter it would be best to start with 1/8 tsp of salt and no more than 1/4 tsp.
- Want to change up the icing? Add a drop or two of your favourite food colouring to the icing or 1/4 tsp of any flavour extract you like!
Ally’s Tips:
- Before adding the sprinkles to the batter it is best to mix them into the flour. This will keep them from all sinking to the bottom. The flour coats them and helps them be evenly distributed throughout the cake.
- When adding the flour it is best to follow the instructions and add 1/2 the flour, then 1/2 the milk, then repeat as this will keep you from over mixing the flour and making the cake tough in texture.
- The two worst things you can do when making a cake is over mix and over cook. When approaching the estimated cooking time add 1-5 mins each time and check often. This icing on the other hand is almost impossible to over mix. Baking with a kid? This is a great thing for them to make!
Storage
Store this cake in an airtight container. For best results line the container with paper towel to absorb any moisture to keep it from going back into the cake. Avoid the fridge as this tends to dry cakes out quickly.

Equipment
- 9×9 or 8×8 pan
- whisk or flour sifter
- Large Mixing Bowl
- Electric Mixer

Ingredients

- 1/2 cup salted butter room temperature
- 2 eggs room temperature
- 1 cup granulated sugar
- 2 cups flour sifted or whisked
- 2 tsp baking powder
- 1 dash salt
- 1 tsp vanilla
- 1/2 cup sprinkles divided
- 1 cup milk room temperature
easy vanilla icing
- 3 cups icing sugar
- 2/3 cup salted butter room temperature
- 3 tbsp milk room temperature
- 1 1/2 tsp vanilla
Instructions

- Pre heat oven to 350 degrees
- In a large mixing bowl, cream together butter and sugar until light and fluffy
- Add vanilla and eggs, mix until well combined with butter at a medium to low speed.
- In a separate mixing bowl, whisk flour in 20-30 seconds or swift with a flour sifter. Add in baking powder, salt and half of your sprinkles (1/4 cup, save the other 1/4 cup for the top of the cake). Whisk together.
- Add half of your flour mixture to the cake batter, mix 3-4 times until starting to combine. Add half a cup of mix and mix 3-4 times. Then repeat with remaining flour and milk mixing in between.
- Mix on low-medium until fully combined but be careful not to overmix.
- Line a 9×9 pan with parchment paper and pour batter into the pan. Smooth out with spatula so that the batter is evenly distributed in cake pan.
- Cook for 24-28 mins. If using a 8×8 pan then make sure to adjust your cooking time accordingly.
easy vanilla icing
- in a large mixing bowl, cream butter and 1 cup of icing sugar by mixing on medium-high for 1-2 mins until well combined. Butter mixture should turn to a light yellow.
- Add in vanilla and another cup of icing sugar, mix until well combined.
- Add milk, salt and remaining icing sugar and mix on medium-high until well combined.
- You can add more milk or icing sugar to reach a desired consistency. You can also add food colouring if you want to change the icing color.
