These are easy chocolate coconut energy bites that you can customize almost any way you want and will totally cure your craving for sweets!
Does anyone else know the feeling of craving sweets but want something (sort of) healthy instead? Because I sure do! A few years ago I was searching Pinterest to find a (healthier) alternative to sweets and I came across all these recipes for energy bites – what a great option! I tried a few and over a few months figured out a recipe that I liked that I could have done in less than 20 minutes. These chocolate coconut bites are easy to make, packed with protein and will cure your sweet craving!

A few things about this recipe:
- You can change this almost anyway you want! See substitutions below.
- They are ready to eat right away but best left chilled for an hour first.
- You can add a protein powder to the energy bites – my favourite it chocolate !
Ally’s Tips:
- If they seem dry you can add an extra tablespoon of melted coconut oil, if the batter doesn’t seem thick enough you can add some more oats, 1/4 cup at a time.
- This recipe can make 26 1″ (or 1 bite energy balls) or 13 2″ (two bite energy balls).
- If you are adding more nuts, seeds or coconut you will want to add more coconut oil. Alternatively if you choose to not add things listed below remove 1 tablespoon of coconut.
- Really like PB and chocolate? Add less coconut oil and more PB for more of a Peanut Butter Cup taste.
- Dark or unsweetened cocoa powder is another great way to have less sugar in your recipe!
- Swap out some nuts for cranberries if you want to change it up a bit.
Storage:
- Store in the fridge in an airtight container for up to 10 days
- Freeze up to 3 months for best results
Ways to change up your chocolate coconut
energy bites & substitutions :
- Want them to be on the sweeter side? Switch out Organic Peanut Butter for a PB with added sugar.
- Don’t have walnuts at home? Pecans and Almond pieces also taste great!
- Don’t want or have any Protein Powder? No prob bob, just skip it.
- Want to add a bit more sweetness without the added sugar PB? Add a bit more honey and oats to add sweetness but keep consistency thick enough.
- Mini Chocolate Chips work great as well!

Chocolate Coconut Energy Bites
Easy chocolate coconut energy bites that are ready to eat in less than 20 minutes! So many ways to customize these if you want to change it up.
Equipment
- Heat Proof Bowl
- Whisk
- Spatula
- Parchment Paper
- Cookie Sheet
Ingredients
- 1 1/2 cup oats
- 1/2 & 1/2 cup shredded coconut divided
- 1/8 tsp salt
- 1/2 cup ground flax seed
- 1/3 cup chocolate chips semi sweet
- 1-2 scoop(s) chocolate protein powder optional
- 1/4 cup pecans crushed
- 1 tbsp chia seeds
- 1/3 cup honey
- 3 tbsp coconut oil room temp
- 3/4 tsp vanilla
- 3/4 cup organic peanut butter
Instructions
- Put 1/2 cup coconut in a bowl and set aside.
- Mix all dry ingredients together in a bowl (oats, 1/2 cup coconut, salt, flax seed, chocolate chips, protein powder, pecans and chia seeds) and set aside.
- Add all wet ingredients (honey, organic peanut butter, coconut oil and vanilla) to a heat proof bowl and stir.
- Microwave wet ingredients in 30 second increments until fully melted and stirring in between.
- Once melted, add dry ingredients and stir until combined.
- Using a tablespoon or ice cream scoop, scoop batter and roll into 1" or 2" balls depending on preference.
- Roll energy balls in your separated bowl of coconut until covered. Place on parchment lined cookie sheet and place in fridge.
- Eat and enjoy!
