aren’t the latest version of cake pops SO CUTE!

don’t get me wrong I LOVE cake! But how convenient would be to have grab and go cake?! No fork, no plate, just cake!

They took me a couple tries but I think I’ve figured it out enough to share with you. My first few rounds definitely did not turn out as cute as the ones shown below. I included a picture of the first ones I made in this post so that we can bond over our funny looking cakecicles together haha.

These are perfect for showers, birthdays or any event – there are unlimited ways to customize colours and decorate these for any occasion! For this post I used a basic white cake I had leftover and a vanilla buttercream but there are SO many flavour combos you can make with these. Comment below in the comments section what flavour combination you think would be great!

What do you need make cakesicles?
  • Cake
  • Icing
  • Candly Melts or Chocolate to melt
  • Sprinkles (optional)
  • Silicone Mold
  • New paint brush
  • Popsicle sticks

Tips & Tricks

  • Don’t worry, you do not need to make a whole cake and icing just to make these, the store bough mixes will be just fine!
  • If you are making a cake, I recommend making a sheet cake and cutting it in 4 (for a 9×9″) or 6 (for a 9×13″) and freeze whatever you don’t use. This way you just need to unthaw it anytime you want to make cakecicles.
  • Don’t over heat the candy melts. They turn into a crumbly mess when too hot and then they aren’t useable anymore.
  • If you are using baking chocolate or melted chocolate chips for the shell, both of these take much longer to harden so you will need to change the cooling times in the fridge. I suggest getting the chocolate candy melts because it’s much faster. Real chocolate could be 15-20+ mins per step.
  • I researched a couple different ways you can make these and I have to say that dipping these in melted chocolate was NOT easier for me haha. Others do this and it comes out soo good but when I tried it, it just did not look cute!
  • For trimming the edges with a hot knife I recommend boiling some water in a glass and leaving the knife in it to get really warm while you are making the cakecicles.
  • If you are decorating with sprinkles you have a very short window to add them. I learned this the hard way. Because the cakecicle is cold from the fridge, the drizzle you add to the top cools really quickly so you need to be ready with the sprinkles.

alright let’s get making cakesicles!

(follow along the images below incase you get stuck!)

  1. Make your favourite cake ! Don’t worry it can totally be store bought if baking isn’t your specialty.
  2. Crumble 2 cups of cake in a small mixing bowl.
  3. Grab your favourite icing – this can also be store bought if needed!
  4. Add 1-2 tablespoons of icing to the cake crumble. The icing works like a glue but if you add too much the cake mixture will be too moist and will fall apart. I suggest adding 1 tablespoon mixing and start to combine like you see below. If it sticks together, then don’t add more. If it still seems crumbly then add a bit more icing.
  5. Set your bowl with the cake and icing mixture below.
  6. Melt 1 cup of candy melts or chocolate to a microwave safe bowl. Microwave for 30 seconds, mix and repeat until it is melted. Make sure you read the tips above so that you get the best outcome!
  7. Take your cakecicle silicone mold and using a new paint brush, paint a thin layer of melted candy melt or chocolate. Place in the fridge for 5 mins. If you are using baking chocolate or melted chocolate chips, see my note above in tips and tricks about time.
  8. Remove from fridge and paint a second thin layer. Be careful that it doesn’t pool at the bottom of the layer of chocolate will be really thick in the corners. See the picture above of my first attempt. Place in fridge for another 3-5 minutes.

Now it’s time to add the cake mixture!

  1. Take your cooled molds out of the fridge and grab your cake/icing mixture. Take a spoonful of the mixture and make a ball that is slightly smaller than the mold (about 75-80% of the size).
  2. Carefully press into the mold, don’t press too hard or you risk cracking the mold. You want it to be a little lower than the top of the mold so that when add the chocolate or candy melts it will be flush with the top of the mold. Also it will rise a bit when you add the popsicle stick.
  3. Add the popsicle stick carefully. You may need to press the cake and icing mixture back down afterwards to keep it below the top of the mold (see picture below).
  4. Add a layer of melted chocolate or candy melts to the top, use the flat side of a butter knife or an icing scraper to smooth out the top. Check to see if the chocolate/candy melts are still warm, if not you may need to microwave for 15-20 seconds if needed.
  5. Place in the fridge for 5 minutes.
  6. Remove from fridge and carefully remove the cakesicle from the mold. I suggest holding the popsicle stick in one hand and slowly peeling the mold off with the other hand, guiding it out with the popsicle stick.
  7. Once you take if out of the mold you may have some edges that aren’t smooth. Use a hot knife to slowly trim the edges down. If it helps, imagine you are peeling an apple or a potato, it’s the same motion.
  8. Here’s the fun part! You can quit now and eat them (I won’t judge you) OR you can decorate them! Grab any colour candy melt or another type of chocolate (milk, dark or white) and sprinkles of your choice and get creative! Check out my tips above if you plan on adding any sprinkles because it was a little more tricky than it seemed.
